The other night I finally made what I've been waiting all the weeks to make; tomato soup! Because most all the ingredients came right from my garden (I didn't grow the garlic or sour cream). Anyway, it was great recipe that I got, of course, from Meikel, and it was delish!
Sorry, I did intend to post the recipe when I posted the pictures but I got lazy and didn't. And Meikel doesn't mind sharing her recipes, in fact, everyone must check out her food blog. Everything I've tried has been amazing!!
Meikel's Tomato Soup
1 tsp olive oil
1 lg onion, chopped
2 carrots, chopped
2 1/4 lbs rip tomatoes, quartered
2 garlic cloves, chopped
5 thyme sprigs
4-5 marjoram sprigs
3 tbs cream fresh (sour cream and lemon juice)
1. Heat olive oil, add onion and carrot and cook over med heat for 4-5 min or until softened, stirring occasionally.
2. Add tomatoes, garlic, and herbs. Cover for 30 mins.
3. Blend and add cream fresh. Serve with crusty bread. (Costco has some great bread.)

Yay! That's awesome. Does Meikel let you share the recipe? Because you should post it, not that I would make it cuz it has those nasty red things in it. :)
My garden is not quite there yet, but it's coming. Right now we are just eating lots of zucchini and squash.
